The Runaway Train Bakery uses fruit and vegetables from Cheshire to create innovative and seasonal cakes.
The bakery uses local ingredients including free range Cheshire eggs & flour milled in Stockport. We also avoid the use of ultra processed foods and single use plastic.
In 2024 our Pink Ginger Cake won a Gold Taste of Cheshire Award as part of the Groobox entry in 2025 a Silver Award.

In the summer of 2024 I was struck by the lack of variety in the cakes available locally. I felt they didn't reflect either the season or their locality, and were made with margarine and other chemical 'nasties' and worse still were packaged in single use plastic.
Happily a local veg box provider bought into my idea for creative, cakes made from local ingredients. Groobox became my customer, veg supplier and the bakery's first home!

The bakery is named after a 1993 song 'Runaway Train' by Soul Asylum.
It was a very personal name choice & for me is about escaping from depression and a professional career that was making me miserable.
Nowadays 'Runaway Train' is often played at high volume as I bake and serenade the cakes.

Cakes are a key part of every celebration! Our range always extends to include cakes for Christmas, Easter, Mother's Day, Halloween etc ...
Although cakes for special events aren't a mainstay of The Runaway Train Bakery we can happily produce them for customers on request.

I write a weekly news letter focusing on my current foraging, harvesting and baking. It also covers the development of new cakes & life in the kitchen.
In addition to being included in every cake box the news letters are also published as a blog below.


A buttery orange bundt (ring) cake speckled with tangy cranberries. Topped with orange glace icing, dried cranberries, and festive silver balls. An unusual and fresh cake for the run up to Christmas.

A festive take on a traditional favourite with ginger nut, marshmallow and crystallised ginger wrapped up in dark spicy chocolate. Topped off with a fondant gingerbread man and Christmassy silver balls.

A christmassy update for our ever-popular Bara Brith, it’s our usual recipe but with added glace cherries and cranberries and an almond topping. A teatime favourite for advent!

At the end of the summer we had a glut of plums and apples. Using a traditional recipe we preserved them using our spiced mincemeat recipe.
In the run up to Christmas our mincemeat stars in our delicious crumble cake, sandwiched between a golden buttery sponge and a crunchy crumble topping. A cakey twist on the traditional mince pie.
